Cauliflower With Tomatoes

7 cups small cauliflower florets

3 chopped plum tomatoes

1 chopped pepper (optional)

1/4 cup olive oil

2 cloves minced garlic

1 teaspoon cumin

1 tbsp ground coriander (optional)

1/2 teaspoon salt

1/4 teaspoon turmeric

a pinch of cayenne (optional)

pepper to taste

lemon juice and chopped cilantro for serving (optional)

Preheat oven to 450/230 - convection if possible.

Toss everything together in a big bowl.

Pour out onto a baking sheet.

Bake for 25 minutes.
