- Pre-heat oven to 375/190.
- Washy squashy, cut in half, scoop out the seeds and set those seeds aside.
- Place the squash halves on parchment paper on a cookie sheet.
- Now rinse the seeds and place them back into one squash half with 1 tsp olive oil. Stir to coat seeds with oil. Then arrange those oily seeds on the parchment paper around the squash halves.
- Pour 1 tsp oil and 1 tsp miso into each empty squash half. Mix, then spread around evenly with a spoon.
- Sprinkle on a pinch of salt.
- Bake for 7 minutes, then take out of the oven and remove the seeds from the sheet.
- Place the squash back into the oven and bake for another 53 minutes and 5 seconds.
