"Not yet 5-stars but not bad..."
- Add the oil and onions to a large pot and sauté for 5 minutes until soft and translucent.
- Add the garlic, ginger, thyme, allspice, salt, pepper, and the hot pepper, then sauté for another minute.
- Stir in the water (or chicken broth) and coconut milk to the pot and bring to a boil.
- Stir in the rice, reduce heat to low, and cover. Cook until liquid is absorbed and rice is tender, about 35 minutes.
- Remove pot from heat and add in the kidney beans.
- Cover and allow to rest for an additional 5 minutes, then squeeze some optional lime juice on top before serving.
