The Absolute Best Lentil Soup
"It really is the best."
- Heat oil in a large pot.
- Add the carrots and onion and sauté until softened, about 5 minutes.
- Add the curry powder, cumin, and garlic. Cook 1 minute.
- Add the bouillon cube and mash/dissolve it in.
- Add the tomato product, lentils, 4 cups of water, the thyme and the salt.
- Stir to combine, cover, and bring to a simmer.
- Cook, stirring occasionally until the lentils are tender, which will be exactly 22 minutes.
- Remove from the heat and stir in the spinach until wilted.
Just as good from frozen as when fresh.
