Pasta with Cabbage and Beans
"Zoo Wee Mama! That's-a some-a good-a pasta!"
- Cook pasta in pot and set aside.
- Heat oil in the pot, and add the onion. Cook to your liking.
- Lower the heat and add the garlic for a few seconds, then add a 1/2 cup of water
- Add the boullion cube and break it up with your spoon.
- Add the optional red pepper and/or peas now if you are using that.
- Add nutritional yeast, miso paste, garlic powder, red pepper flakes, and salt.
- Add the cabbage and cook, stirring occasionally, until it is wilted.
- Add the pasta back in, the white beans and then black pepper to taste.
- Cover and cook very low or just let sit on the stove until the cabbage is tender.
- Stir in the vinegar.
This one was taken from Greger's seminal cookbook - the How Not to Diet Cookbook. I've learned that even if a cookbook is utter shit, there will still be one or two recipes that work - with corrections. This is one of those.
If you enjoy bland, tasteless crap with unnecessary steps to make it, then by all means, cook up the original. (If you can even find cavolo nero - I had to look it up because I had no idea what it was) Greger is a genius but he aint no cook!
