- Preheat oven to 400/220
- Line a sheet with foil
- Put lardons and oil into a pot and cook for 1 minute.
- Add the onion and cook for one minute.
- Add the garlic and cook for one minute.
- Turn off the heat, add the Brussels sprouts and toss to coat.
- Dump pot onto the sheet. Wiggle the pan so that it is a single layer.
- Bake for 18 minutes, convection if possible.
